Summer Corn Avocado Salad
Grilled sweet corn and avocado salad with cherry tomatoes and basil. English-language version of Ensalada del Huerto.

Ingredients
- 3 sweet corn (elotes)
- 3 tablespoons olive oil
- ½ teaspoon ground cumin
- 1 large hass avocado
- 1½ cup cherry tomatoes
- ½ cup chopped red onion
- ¼ cup chopped basil
- Salt and pepper to taste
Instructions
- Preheat grill to 450°F.
- Brush corn with olive oil, season with salt and pepper.
- Grill over direct heat until browned, turning occasionally.
- Remove from heat, cut kernels off the cobs.
- Mix with remaining ingredients.
